Calaveras County Fair Blue Ribbon Recipe "Strawberry Spinach Salad"
Frogtown, USA....Last week, strawberry plants were planted in the Community Garden here at the Fairgrounds. So a recipe using strawberries seemed perfect to share this week. Strawberry Spinach Salad....
16 oz. spinach leaves
2 carrots, peeled and shredded
2 cups sliced mushrooms
1/3 cup slivered almonds
Raspberry Dressing
1 packet Homemade Gourmet Raspberry Velvet Fruit Dip
1/4 cup raspberry preserves
2/3 vegetable oil
1/4 cup of water
1. Place spinach, carrots, strawberries, mushrooms, and almonds in a large bowl. Toss to combine.
2. To make raspberry dressing: Whisk together Raspberry Velvet Fruit Dip, raspberry preserves, vegetable oil and water. Pour half of dressing over salad and toss to coat. Add more dressing to taste.
