Blue Ribbon Recipe Thursday by Calaveras County Fair & Jumping Frog Jubilee

Easy Pineapple Cake

Preheat oven to 350, lightly oil 13x9 pan

Beat together: 2 eggs and 2 c sugar

Add: 2 c flour, 2 tsp baking soda, 1-20oz can crushed pineapple (undrained), 1/4 c walnuts (optional)

Stir together well, pour into prepared pan and bake for 45 min.

It is delicious without frosting or you can make the following Cream cheese frosting and it is simply divine!.....



FROSTING

1 8oz pkg cream cheese

1/2 c margarine or butter

1 16oz box powdered sugar

1 tsp vanilla

NOTE: I used black walnuts and loved that extra sweet nutty flavor they added...also, don't be put off by the pineapple as it didn't seem to me to have a lot of pineappley flavor, it seemed to act more to make it really moist and give an interesting texture. Also, don't be surprised when it starts turning darker than golden brown...it turns the color of a nice loaf of banana bread. This is one of the quickest (other than the bake time) and best cakes I've made in quite awhile.
