The Great Local TV Cooking Show (Elémentaire TV) Episode 4: D - Deglaze With Jenny & Dave
Angels Camp, CA....In this episode of Elémentaire TV, Dave and Jenny create a delicious reversed apple pie with a Crème Chantilly topping. Elémentaire is the creation of two professional cooks dedicated to helping take the mystery out of making delicious meals from scratch. Our goal is to educate through the use of culinary terms and techniques and also inspire, through the use of the freshest seasonal ingredients, all who watch to make their own meals to enjoy at home. Every Sunday Night at 8pm we will premier another, great, new episode of Elémentaire with Jenny & Dave.
D - Deglaze
definition: to dilute meat sediments in a pan to make a gravy/sauce
Inverted Apple Pie
3 baking apples such as Granny Smith peeled, cored and sliced
1/4 cup apple cider
1 teaspoon cinnamon
1/4 cup brown sugar
pinch cloves
Zest of an orange
Place the above ingredients into a cast iron skillet and cook until the apples are al dente. Remove from the heat.
1 sheet thawed puff pastry
Turn the skillet you are using upside down on top of the pastry and cut a circle to fit the pan.
