Chef Chat with Executive Chef James Lehman of Ironstone Vineyards Talks "Chipolte Salsa!"~With Video

Murphys, CA...This Week on Chef Chat, Executive Chef James Lehman of Ironstone Vineyards shows us how to prepare home made Chipolte Salsa! A reminder the 3rd Annual BBQ Competition Hosted by Ironstone and Chef James will be held this Sunday, June 7th. Ironstone Executive Chef James Lehman started his culinary career at the age of 16, doing food preparation for local restaurants in his hometown of Vacaville CA. In his 20’s, he had the honor of cooking at Thomas Keller’s French Bistro, Bouchon, nestled in the Napa Valley town of Yountville CA.....


After deciding that cooking was his true passion, he attended the famed Culinary Institute of America in Hyde Park, New York, where he learned about the modern and classic cuisines of the world. Chef James graduated from the CIA in early 2004, after which he took on a Sous Chef position at the popular Woodstock NY restaurant, New World Home Cooking.

While at New World, Chef James had the opportunity to work with Chef Ric Orlando, whose creative and multicultural cuisine focuses on the use of organic and sustainable products, as well as offering many Vegetarian and Vegan dishes. Chef James started at Ironstone in the spring of 2005 and was recently awarded the Employee of the Year for 2007.

In September of 2007 Chef James returned to his alma mater to participate in the Professional Chef Certification Program Offered by the CIA and the American Culinary Federation. After 4 long days of testing, Chef James was awarded the title of ProChef II and a Certified Chef De Cuisine.

SUNDAY, JUNE 7TH at Ironstone Vineyards....The grills are on fire, the smoke is churning, and the meat is sizzling.

The 3rd annual Ironstone Vineyards BBQ Competition is hosted and judged by Executive Chef James Lehman.

Are you master of the grill? King of the weber? Earn the actual bragging rights by entering into this competition and taking away the prize.

Entry Fee: $25 for one category, $5 for each additional category.

Competition Rules

Entry forms must be accepted by Chef James before you are qualified for the competition. Forms are available at www.ironstonevineyards.com.

This weeks recipe for Chipotle Salsa...

2 14oz cans diced tomatoes
1/2 Cup red onion, chopped
2 -3 green onions, sliced
2 Tbs. lime juice
1/3 cup cilantro, chopped
3 chipotles
1 tsp coriander, ground
1/2 cup beer
2 Tbs tomato paste
1 tsp salt
Place all ingredients into the bowl of a food processor and puree until desired consistency is achieved.
