Murphys, CA...This week on Chef Chat, Executive Chef James Lehman chats about Pickled Peppers! Chef James loves to pickle, and in this episode he will be dispensing all of his pickling wisdom...
Pickled peppers

2-3 anahiem peppers
2-3 poblano peppers
4 cloves garlic
1 Tbs black peppercorns
1 bay leaf
2 tsp coriander seeds
1 1/2 Cup water
1 1/2 cup distilled white vingar
3 Tbs kosher salt
Wash the peppers and then cut off the tops and bottoms. Remove the ribs and seeds and then cut into strips about 1 inch thick. Pack the pepper strips into a sterilized jar with the peppercorns, coriander, garlic and bay leaf. Bring the water, vinegar and salt to a boil. Pour into the jar and then seal with lid. Boil jar for 5 minutes, remove and let cool to room temperature.
