Homemade Breakfast for Mom!

Here is a Breakfast Menu selection we found for that special Mom...Why not start her day off right! Strawberry Stuffed French Toast, Maple Glazed Bacon, Tropical Fruit Kebab with Lime Cream, Coffee, Juice or Tea. These yummy recipes are enclosed....


Strawberry-Stuffed French Toast Recipe

1 8 oz. package cream cheese, softened
1/2 C. powdered sugar
1 T. vanilla extract
1/2 t. cinnamon
8 slices bread, white or whole wheat
3 cups strawberries, hulled and sliced
3 eggs, beaten
2 T. milk
4 T. butter, optional
2 T. powdered sugar, sifted

In a small bowl, combine the cream cheese, 1/2 cup powdered sugar, vanilla extract and cinnamon; mix until smooth. Spread one side of each slice of bread evenly with the cream cheese mixture. On the cream cheese side of four slices of bread, layer with some sliced strawberries evenly over the surface of each slice. Top each slice with a remaining slice of bread, pressing the cream cheese side down onto the strawberries. Press together gently to seal berries inside sandwich.

In a shallow bowl, combine the eggs and milk; mix well and set aside.

Preheat oven to 200°F. Spray a large baking sheet lightly with cooking spray and place in oven. Spray a large non-stick skillet with cooking spray or melt 1 tablespoon butter in skillet over medium-high heat.

Dip strawberry sandwiches into the egg mixture, turning to soak each side. Place soaked sandwich in the hot skillet and cook on each side until browned. Remove sandwich from skillet and place on baking sheet in warm oven and repeat until all sandwiches are cooked.

Just before serving, cut each sandwich diagonally; top with remaining strawberries and sprinkle with 2 tablespoons powdered sugar. Serve with Warm Strawberry Syrup (see recipe below) or maple syrup. Serves four.

Warm Strawberry Syrup
1/2 C. maple syrup
2 T. orange juice or Grand Marnier
3/4 C. pureed strawberries

In a small saucepan, combine the maple syrup, orange juice and pureed strawberries. Heat mixture over medium heat for 5 minutes or until thickened slightly, stirring frequently. Serve while warm.

Makes 1 1/2 cups.


Maple-Glazed Bacon

Bacon baked with maple syrup becomes tantalizingly sweet, smoky and caramelized.

1 pound thick-sliced bacon

1/2 cup pure maple syrup

1 teaspoon dry mustard
Preheat oven to 400°. Line bottom of a broiler pan or a large rimmed baking sheet with heavy foil. Place a rack on the pan; spray with nonstick coating. Arrange bacon on rack.

Whisk maple syrup and dry mustard. Brush half over bacon. Bake for 15 minutes. Turn and brush with remaining syrup. Bake an additional 8-13 minutes, or until bacon is very crisp and golden. Remove from oven and let bacon rest on rack for 5 minutes. Using a spatula, remove to a plate. Do not drain on paper towels because it will stick.

Makes about 12 slices

Per slice: 105 calories, 4 g protein, 9 g carbohydrate, 6 g fat (2 g saturated), 11 mg cholesterol, 200 mg sodium, 0 fiber.


Tropical Fruit Kebabs with Lime Cream

1 cup sour cream
3 tablespoons fresh lime juice
2 tablespoons sugar
1 1/2 teaspoons grated lime peel
1 ripe papaya, peeled, halved, seeded (or 2 mangoes, peeled, halved)
1/2 ripe pineapple, peeled, cored
3 large bananas, peeled
8 12-inch-long bamboo skewers

Combine sour cream, 2 tablespoons lime juice, sugar and lime peel in small bowl. Cover and refrigerate lime cream.

Cut papaya into twenty-four 1 inch pieces. Cut pineapple into twenty-four 1 inch pieces. Cut each banana crosswise into 8 pieces and place in small bowl.
Toss with remaining 1 tablespoon lime juice.

Alternate fruit on skewers. Arrange on platter. (Fruit skewers can be prepared 1 hour ahead. Cover and chill.) Serve with lime cream.
