"Elementaire" Episode Three (Elémentaire TV) Episode 3: C - Caramelize
Angels Camp, CA....In this episode of Elémentaire TV, Dave and Jenny show you how to make some festive seasonal appetizers with a side of red wine cocktail. Elémentaire is the creation of two professional cooks dedicated to helping take the mystery out of making delicious meals from scratch. Our goal is to educate through the use of culinary terms and techniques and also inspire, through the use of the freshest seasonal ingredients, all who watch to make their own meals to enjoy at home. C - Caramelize
to convert into caramel
Roasted Pumpkin Pistachio Crescents
An easy-to-cook simple seasonal meal.
1 ½ lbs sugar pumpkin, sliced into ½ inch thick slices with skin on
½ cup Parmigiano Reggiano, grated
½ cup Pistachios finely chopped
3 TBS high quality bread crumbs
4 TBS Italian parsley, finely chopped
2 TBS marjoram, finely chopped
2 ½ tsp finely chopped thyme
Zest of 2 medium lemons
3 garlic cloves, crushed and finely minced
¼ olive oil
Salt and pepper to taste
Preheat oven to 375°
In a small bowl, mix together the Parmesan, pistachios, breadcrumbs, parsley, marjoram, thyme, half the lemon zest, garlic and a pinch of salt. Brush the pumpkin slices with the olive oil and then one by one roll into the breadcrumb mix coating well. In a parchment covered baking pan, roast the pumpkin slices for about 30 minutes until tender. Be careful not to let the topping get too brown.
Red Wine Cocktail
Jenny's go-to wine cocktail.
A bottle of red wine
Cranberry or pomegranate juice
Flavored club soda
Orange or lemon slice
Fill each wine glass ¾ of the way with red wine
Add a splash of juice and club soda
Garnish with a lemon or orange slice
