"Elementaire" Episode Six (Elémentaire TV) Episode 6: F - Fold
Angels Camp, CA....In this episode of Elémentaire TV, Dave and Jenny make a tasty seasonal pumpkin pancake breakfast for you with a side of glazed bacon. Elémentaire is the creation of two professional cooks dedicated to helping take the mystery out of making delicious meals from scratch. Our goal is to educate through the use of culinary terms and techniques and also inspire, through the use of the freshest seasonal ingredients, all who watch to make their own meals to enjoy at home. Every Sunday Night at 8pm we will premier another, great, new episode of Elémentaire with Jenny & Dave.
F - Fold
definition: to put a light mixture into a heavy mixture
Pumpkin Pancakes
A delightful seasonal breakfast food for your enjoyment.
¾ cup whole wheat & all purpose flour
½ cup rolled oats
1 ½ teaspoon baking powder
1 teaspoon baking soda
1 tablespoon sugar
½ teaspoon each cinnamon & salt
¼ teaspoon ginger & nutmeg
¾ stick butter cut into pieces
2 eggs separated
2 cups buttermilk
¼ cup pumpkin
Technique:
Place the dry ingredients into the bowl of a food processor and process until combined. Add the butter and process until the mixture resembles coarse crumbs.. In a separate large bowl combine the wet ingredients. Stir in the flour mixture. Beat egg whites in a small bowl until soft peaks form. Gently fold this into the pancake mixture.Heat a griddle and cook the pancakes on the greased surface
Cider Walnut Syrup
Delicious homemade syrup to go along with your pancakes.
2 cups
½ cup apple cider
½ cup chopped walnuts
Technique:
Place all the ingredients into a saucepan and bring to a boil stirring often. Reduce the heat to simmer and cook 2-3 minutes. Remove from the heat.
Brown Sugar-Glazed Bacon
A delicious breakfast favorite-glazed with brown sugar!
1 pound applewood-smoked bacon, thick-cut bacon slices
1/3 cup (packed) golden brown sugar
Technique:
Position 1 rack in top third of oven and preheat to 400°F. Line large rimmed baking sheet with parchment or foil. Place large rack on lined baking sheet. Arrange bacon slices in single layer on rack. Sprinkle brown sugar evenly over. Bake until bacon is crisp and glazed, 15 to 18 minutes. Cool 5 minutes and serve.
