Prime Rib and Horseradish Cream. "Elementaire" Episode Episode 12: L - Liaison

Angels Camp, CA...In this episode of Elémentaire TV, David and Jenny cook prime rib and make horseradish cream. Elémentaire is the creation of two professional cooks dedicated to helping take the mystery out of making delicious meals from scratch. Our goal is to educate through the use of culinary terms and techniques and also inspire, through the use of the freshest seasonal ingredients, all who watch to make their own meals to enjoy at home.



L - Liaison

definition: the thickening of a sauce or a soup with egg yolks and cream
Prime Rib
Dave's favorite way of preparing prime rib.

1 beef rib roast, 5 to 7 ribs
½ cup vodka
3 TBS sea salt
1 TBS black pepper, freshly ground
12 bay leaves
4 slices of stale bread

Technique:
Rub the rib roast all over with the vodka. Rub in the salt and pepper. Cut some small pockets evenly in the fat and slip in the bay leaves. Let sit at room temperature for 2 hours. Heat oven to 425° F. Put the beef in a roasting pan and roast for 30 minutes. Then turn down heat to 325° and cook 12 to 15 minutes per pound for rare to medium rare. After the beef is cooked, it is very important that it sit in the oven with the door open, or on the oven door for 30 minutes so that the meat can soften and reabsorb all the juices. Place bread slices under the roast before carving and serve the juice-soaked bread with the meat.
Horseradish Cream
A lighter version of a traditional classic.

1 cup fresh whipping cream
2 heaping tablespoons horseradish

Technique:
Whip the cream until soft peaks form. Add the horseradish and gently fold into the cream.
