Episode 13: M - Mise en Place. Streusel Cheesecake & Cranberry Liquor New Years Special
Angels Camp, CA...In this episode of Elémentaire TV, David makes a delicious cheesecake. Jenny also makes a complimentary cranberry liquor to go along with that. Elémentaire is the creation of two professional cooks dedicated to helping take the mystery out of making delicious meals from scratch. Our goal is to educate through the use of culinary terms and techniques and also inspire, through the use of the freshest seasonal ingredients, all who watch to make their own meals to enjoy at home.
M - Mise en Place
definition: the organization of all the cooking materials in the kitchen (including ingredients)
Streusel Cheesecake
A perfect fall cheesecake.
1 lb graham crackers, ground fine
½ cup butter, melted
6 large eggs
2 cups sugar
1 tsp vanilla
1 tsp fresh lemon juice
3 lbs cream cheese, softened
Streusel (Filling and topping)
1 cup chopped nuts-walnuts-pecans (optional)
2/3 cup packed brown sugar
1/2 cup all purpose flour
2 tsp. ground cinnamon
6 TBS firm butter
Process together till crumbly.
Technique:
In a 10 inch springform pan, combine the melted butter and the graham crackers. Press the mixture on the bottom and up the sides of the pan. In a large bowl, beat the eggs, sugar, vanilla, lemon juice and the cream cheese until smooth. Pour mixture into the springform pan. Bake in the middle of a 350° oven for 1 hour. Turn off the oven and let the cheesecake stand in the oven with the door ajar for another hour. Chill in the refrigerator for at least 4 hours. Crumble the streusel topping onto the top and broil low till golden brown and bubbly. Serve.
Cranberry Liquor
A delicious liquor created with cranberries by Jenny.
3 cups minced cranberries
white wine
orange peel
sugar
Technique:
Mix in all the ingredients together in a jar. Stir up with a spoon. Let sit in a dark place for around 3 weeks and enjoy.
