Mustard Sauce for Scotch Eggs
Ingredients
1 egg
1 cup mayonnaise
1/4 cup yellow mustard
2 tablespoons white sugar
Technique
To make the mustard sauce: Crack 1 egg into a small saucepan. With the heat on low, stir in mayonnaise, mustard and sugar. When it just starts to boil, it's done. Remove and let sit until cool, then chill for at least 10 minutes.
Scotch Eggs
Ingredients
2 hard boiled eggs
1/2 pound of bulk breakfast sausage
2 tablespoons of flour
1 tablespoon of breadcrumbs
Technique
Divide sausage in half, then wrap the sausage around each pealed hard-boiled egg. Mix the flour and breadcrumbs inside a bag. Then put scotch eggs in bag and shake.
Season it with and pepper and fry it in hot oil on both sides until golden brown.
