The meat between the ribs, or the rack, is removed for the presentation, and sometimes little white caps are placed over the rib bone ends, which adds a formal, decorative touch. Rack of lamb is the indisputable centerpiece of a dinner that includes it, and the supporting dishes complement, without overshadowing its role.


Appetizer: A simple appetizer provides a subtle precursor to the main course. A red wine reduction with goat herb encrusted goat cheese and baguette slices, or artichoke with bread crumbs and lemon and garlic butter are understated and complement rack of lamb in flavor and style. Side Dishes: Classic accompaniments include herb-roasted potatoes, sauteed green beans with almond slivers, a warm salad of seasonal vegetables with a Dijon vinaigrette, asparagus with hollandaise sauce or mashed potatoes with white truffle oil. These dishes follow a traditional and gourmet approach. Dessert and Wine: A dessert that quietly ties off the meal includes elegant, simple flavors and classic preparations. A hazelnut and browned butter ice cream with chocolate sauce, raspberry pana cotta with whipped mascarpone cream or crystallized ginger ice cream with a toffee and chocolate encrusted cookie are appropriate choices. A medium-bodied local Barbera or Syrah pairs well with lamb.

Columbia, CA...Columbia College’s Symphony of the Sierra boasts several new faces amidst the familiar ones, and conductor, Mic Harper, feels confident about the upcoming free concert in Dogwood at Columbia College, at 3 p.m. on Saturday, December 14th. “This season has held many pleasant surprises for me,” reports Harper, “and, the best of these has been the ongoing musical growth of the orchestra in combination with the influx of new musicians.” The startling thing has been how young these new members are. They range in age from eight to fifteen. “Bringing together any group of people to perform, while exciting, can be a daunting prospect,” says Harper, “but daring to mix such wide range of ages and skills is to jump off a musical cliff. The patience and skills of our older members has made all the difference. Thanks to the willingness and hard work of all concerned it has come to be more like flying than crashing.”

Bear Valley Now Open This Weekend 2013-14 season kicks off first Saturday and Sunday with special $39 daily price

Bear Valley, CA...Recent winter storms and excellent snow making conditions have provided the necessary coverage to allow Bear Valley Mountain to open this weekend, Saturday and Sunday, December 14 and 15. The inaugural weekend kicks off with special pricing of $39 for adult and teen lift tickets the first two days. Full day and single lesson packages will be offered and can be booked online at www.bearvalley.com. This weekend, Bear Valley is planning to open Kuma and Cub chair lifts providing access to beginner and intermediate terrain. Day Lodge services will open at 8:30 a.m. with lifts turning from 9 a.m. to 4 p.m. each day. The mountain will close Monday, December 16 through Thursday, December 19 and reopen Friday, December 20 for daily operations.. New this year, Bear Valley is offering a $99 college season pass for qualified students, on sale through December 20...
